Nutella mini shortcake ( A favorite dessert of mine)

  • 1 mini Angel food cake
  •  1 table spoon of nutella
  •  a few minimarshmallows
  • Wrap in tin foil and broil for about five minutes.
  • Drizzle with chocolate sauce and proceed to scarf. Yumm

Apple cinnamon oatmeal

  •  1/2 Cup old fashioned oats A little under 1 cup water A little under
  •  1/2 cup milk ( i use unsweetened almond breeze)
  •  3/4 an apple chopped into small cubes (most will go into one pot on the stove, save a small handful to put in a seperate pot.)
  •  Ground cinnamon ( add as much as desired)
  • 1. Place all ( except for a small amount of the apple cubes) ingredients into a small pot on the stove.
  •  2. Place the remaining apple cubes in a seperate pot on the stove.
  • 3. Turn first pot on to medium high heat and stir ingredients until boiling. Bring temp down to low.
  • 4. In the 2nd pot add 1/4 cup milk and a few dashes of cinnamon to apples.. Turn pot to medium heat and stir apples.
  •  5. Continue stirring both pots for about 7 minutes until oats begin to thicken.  add more cinnamon along the way!
  • 6. The second pot with only apples in it should thicken up and apples should look moist. Use these to top your oatmeal.
  •  7.  i like to add in maple syrup to my oatmeal and i even sometimes top it with fatfree reddiwhip, soo good!

Banana pancakes in a bowl

Banana hazelnut oatmeal

  •  1/2 cup old fashioned oats
  •  1 cup water 1/2 cup milk ( I use unsweetened almond breeze)
  • 2 Tsp flax seed or chia seed (dont omit this! Its a strange ingredient, but makes the oats creamier)
  •  1/2 mashed banana I like to also add a bit of splenda, pumpkin pie spice or cinnamon Optional:  1 tablespoon vanilla protein powder
  • 1.Combine all ingredients into a pot on the stove ( i like to add the mashed banana 3 or 4 minutes later so it doesnt melt)
  • 2. Stir continously at medium high heat until oats come to a boil. Bring temp down to low and stir a few times for 3-4 minutes adding in mashed banana now.
  •  3. Once oats have become creamy, stir in some hazelnuts( or any nut that you choose)
  • 4.  cut the other half of your banana in to slivers and top your oats with those as well as some additional hazelnuts.
  • 5.  DIG IN!!

A Jumbo Muffin all for You!!

Blueberry or Chocolate Chip Muffin

  • Blueberry or chocolate chip muffin
  •  1/2 mashed banana
  •  1 tbsp flaxseed 1tsp cinnamon
  •  3 tbsp liquid egg whites
  •  3 tbsp old fashioned oats (already cooked)
  •  1/2 tsp baking powder
  • 2 tbsp blueberries or chocolate chips!!
  • Optional: small scoop vanilla protein powder
  • 1.  Preheat oven to 350 and grease a jumbo muffin pan( if you dont have a jumbo pan you can make 2 regular sized muffins)
  •  2. Combine all dry ingredients and mix throughly
  •  3. Add banana, oatmeal, 1 tbsp worth of blueberries and egg whites and use a hand blender to mix until smooth
  •  4. Pour batter into muffin tin and then add the other tbsp of your blueberries or chocolate to the top
  • 5. Place in oven for 30min. Check at the 20 minute mark.  It may take 35-40 minutes to fully cook.
  • 6. Take out of the oven and enjoy!!

Dark Chocolate Dreams Cookies

  • 1/4 cup dark chocolate dreams
  • 1.5 Tbl Flour (I use white whole wheat)
  • 1/4 tsp baking soda
  • 1 Tbl brown sugar
  • 2 Tbl sugar (I use splenda)
  • 1 Tbl unsweetened applesauce
  • 1/4 tsp vanilla extract


  •  Preheat oven to 350
  • Mix dry ingredients
  • Add wet after mixing dry
  • Work dough by hand until the flour has abosorbed completely in
  • Form dough into mini cookie shapes onto cokie sheet
  • Bake in oven for 8 minutes
  • Let cool a few minutes before removing from tray
  • Allow to cool completely and then spread some regular peanut butter onto the bottoms of each cookie and put two together to form a cookie sandwich

The recipe makes 10 small cookies that you can form into 5 cookie sandwiches.  Basically this recipe serves one peanut butter loving person.  Your end result will look something like this:

Pumpkin Banana Oatmeal

Pumpkin Banana Oatmeal

  • 1/2 cup old fashioned oats
  • 3/4 cup water
  • 1/2 milk (I use unsweetened original almond breeze)
  • 1/4 cup pumpkin
  • 1 large banana ( half mashed and half cut into slices)
  • 2 tsp cinnamon
  • dash pumpkin pie spice ( or more to taste)


  • Put oats, water, almond milk, cinnamon and pumpkin pie spice in pot on stove
  • Stir and bring to a boil
  • Lower temp to low and continue stirring for about 3 minutes
  • Add pumpkin and the half mashed banana and continue to stir for an additional 3 minutes  until mixture thickens
  • Pour into bowl and top with banana slices and additional sprinkle of cinnamon
  • Dig in!!

Pumpkin Banana Pancakes

  • 2/3 cup old fashioned oats and white whole wheat flour ( so fill half with oats and other half with flour to 2/3)
  • 1/4 cup pumpkin
  • 1/4 cup mashed banana
  • 1 Tbl honey
  • 1 egg
  • 2 TBl milk
  • 1/2 tsp pumpkin pie spice

Almost Ready!

  • Combine All ingredients into one bowl and use an immersion blender until smooth.
  •  Preheat a skillet to medium and pour batter onto skillet to form 3 pancakes.
  • Use a spatula to flip pancakes and cook on each side for about 3 minutes once both sides are slightly browned

Pumpkin Banana Awesomeness

Banana Nut Chocolate Awesome Bread

Warning! Sooo good you may not want to stop eating!! Yes it's that delicious!

  • 2 Cup Flour ( Use white whole wheat)
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 3/4 tsp baking powder
  • 1/3 cup milk
  • 1 and 1/2 tsp vanilla extract
  • 1/2 cup maple syrup or agave
  • 1 and a 1/2 TBL lemon juice
  • 1 Tbl splenda or sugar
  • 2 Cup tightly packed mashed banana ( measured after mashing)
  • 1/2 cup chocolate chips ( I used gheradelli dark chocolate baking discs) Plus more for the top of loaf!!
  • 1/4 to 1/2 cup hazelnuts ( or other type of nut)


  • Preheat oven to 350
  • Combine dry ingredients and mix well
  •  In a seperate bowl, combine wet ingredients and mix into dry. (Dont overmix)
  •  Pour mixture into a greased loaf pan and cook for about 50minutes
  •  If the top is cooked but the midfle is gooey when toothpick inserted place some tinfoil on top and continue to cook for 5 to 10 additional minutes.
  •  Let cool for 10 minutes before cutting into slices. I know its hard!!

My husband was trying to get at it the second it came out. The reason I have no other pictures is because it was sooo good we couldnt stop eating it. Plus I didnt have my blog yet and didnt think about it. I did use some of this goodness on the bread and it was heavenly
